I have been rushing around so much today, I’m exhausted now! I hate being rushed and do everything I can to prevent it. I’m super organized and always early for everything. Unfortunately things just weren’t going my way today!
Breakfast
I set my alarm for the right time this morning, got up, made lunch, and got ready for work. Then I sat down to check e-mail, read blogs, etc. and somehow got confused and thought that I didn’t have to be at work until 1/2 hour later than I actually did. Usually I have it timed out so that I can play on the computer for about 10 minutes before I have to go make breakfast, and I kept checking the time and thought how strange it was that I had so much extra time this morning. I then realized what time I actually had to be at work and freaked out. I had to leave the house in 7 minutes to make it on time. This seriously never happens to me! I flew downstairs, started coffee, and made the fastest breakfast I could think of that I would be able to take with me. PB on an English Muffin. I was pretty upset because I was really looking forward to my typical pre-work yogurt breakfast but there just wasn’t time. I’m sure this was as delicious as usual but I just couldn’t enjoy it since I had to stuff it down my throat while driving to work. I just don’t know what got into me this morning!
Lunch
Luckily I had much lunch all packed and ready to go or else I would have had to settle for gross fast-food. My salmon wrap was delicious and super-filling. Yum!
After work I quickly rushed over to the eye doctor for my appointment. This took way longer than I expected it to and by the time I was done I knew that the only way I would make it to yoga on time would be if I seriously sped. There’s always a lot of traffic this time of night and I knew that it would just make me frustrated and anxious trying to get there on time–the opposite of what yoga is supposed to make you feel. Also, I’m still not feeling my best, my throat hurts and I’m sneezy and achy–yuck! So rather than continue my rushing I just decided to take the day off working out and go home to relax a bit.
Dinner
Since I had extra time I could leisurely make a delicious dinner. Tonight was Calamari Curry. It was SO simple to make, and really good! I just sautéed some onion, mixed in curry powder and then stir fried some frozen calamari with mustard seeds and added coconut milk, brown rice, and frozen peas/carrots. This had so much flavor–I used a ton of curry powder so it was really spicy! I just love how colorful it is too!
Dessert
I needed something cool to soothe my poor throat, so what better than Dairy Queen! I love this stuff, it’s so creamy and amazing.
It’s definitely going to be an early bedtime tonight. I need to rest up so I can feel better soon! Goodnight!
I hope you’re feeling better, Sarah! Personally, I think sore throats are the worst ailment to have – I was really glad to see you got some DQ because that can only help 🙂
Argh, I hate rushed days as well. It’s some sort of paradox because while they seem so fast-paced, they also seem to NEVER.END. Oy.
That calamari curry looks so tasty! I really need to start buying brown rice because I love stir-fry and it’s so hassle-free, too!

i hate rushed days! they always seem to go by the most slowly. the curry dinner you made looks absolutely incredible. i make a similar one with shrimp and it’s so easy and delicious!
