Unbelievable

I just love watching the Olympics. It’s so unbelievable what these athletes can do. Tonight I’ve been watching some of my favorite events: diving and gymnastics. It’s so hard to believe that the majority of these girls are younger than I am. I can’t even imagine how nervous they must be and the insane pressure they are under! 

Breakfast

I started my day with the usual bowl of cereal. Nothing special here, but it did the job of filling me up and fueling me through my exercise and other random activities. 

Lunch

I had a semi-early lunch before work today. I just made a simple tuna salad with tons of veggies. I seriously overloaded the vegetables here, it was a ton of food and I had a hard time finishing. Along with my usual squirt of dijon mustard I also added about a tablespoon (maybe less?) of plain nf yogurt because I have heard about this a lot but have never tried it. It did make the tuna pretty thick and creamy but overall I wasn’t a fan. I eat yogurt all the time and always add fruit to it making it a sweet treat. I guess because of this I associate yogurt with sweetness even though it is pretty tart/sour. It just was a weird combination of flavors with the tuna and from now on I think I’ll just stick to the mustard.

Along with my tuna I had a crispy gala apple which unfortunately wasn’t as sweet as I would have liked. Even though the flavors weren’t perfect in this lunch, it was totally filling and got me through my day of work without needing a snack.

Dinner

For dinner we ordered pizza from our favorite pizza place. The slices are super thin and crispy, which is how I like it! I’m not really a fan of pizza in general so this was nothing special for me. We got a seafood pizza which is basically a white pizza with shrimp, capers, onions, and spices. It was ehhh. I stuck to just 1 tiny piece and filled up on salad (I had a second helping of salad after I finished this). Again, it was nice not having to clean up after dinner, but I would so much rather have had a healthy home-cooked meal. It’s back to real home cooking tomorrow for sure!

Dessert

This was definitely the best part of the day! We split some desserts and I had a small portion (this is a salad plate) of the most amazing-words can’t even describe-my absolute favorite food in this world carrot cake and some Oreo Cheesecake. Sure, the cheesecake would have been great if I had it on its own, but compared to the Carrot Cake it just seemed silly. Honestly I dream about this carrot cake sometimes, it is so moist with big raisins, nuts, and I think I even tasted a hint of caramel this time. The cream cheese frosting is to die for. Honestly this is the best thing I have ever put in my mouth.

And while I had to work away my weekend while you all relaxed, now I get to enjoy a day off tomorrow while you all have to go into the dreaded Monday. Mwahahaha. I’m kidding–I hope everyone has a great week full of great food!

    I’ve always wondered about whether I should try incorporating yogurt into sauces, since I’ve seen it so much in the blogosphere. Thanks for providing an unbiased review – the only way I eat yogurt is when it’s sweet, so I’m sure I wouldn’t like it that way, either.

    Our family has a thin crust pizza place we love, too. But I always make sure to get the salads they have there, because they are AMAZING and that way I don’t eat as much pizza (I, like you, am not really a huge fan because of the way it situates itself in my stomach).

    And WOW. The best thing you’ve ever put into your mouth? I need to get my hands on some of that carrot cake!

    i actually do like plain yogurt in my tuna…but I grew up having it with just mayo and never mustard…so maybe it’s different?

    and i have to agree… carrot cake is AMAZING! that dessert plate looks fab!

    carrot cake and oreo cheesecake?!?! i’m drooling on the keyboard over here!!!
    the tuna salad looks beautiful and delicious– it’s too bad you didn’t like it with the yogurt. i usually use yogurt instead of oil, butter or mayo in a lot of recipes but maybe i’m used to the tartness??
    everything looks wonderful but i think the dessert wins 😀

    Carrot Cake = MY FAVE TOO!!!!! WF makes a vegan carrot cake loaf = to die for and totally healthy! not too sweet, no icing, more breakfasty than desserty, but with ww flour, tofu, etc (sugar duh haha) i’ll DEF take it! 🙂

    That cakes looks incredible. CREAM CHEESE FROSTING IS THE BEST! Don’t you love apples and tuna?
