Getting Settled

Whew. I’m finally back at school, mostly unpacked, and starting to settle in. We got here bright and early and spent hours running errands and lugging stuff up 3 flights of stairs–this definitely counted as a workout!

Breakfast

We grabbed breakfast quickly at Panera to eat on the road. As much as I love Panera, I was really disappointed with their breakfast options. There was not much in the way of healthy-eats. I really could have used a nice bowl of oatmeal or a fruit and yogurt parfait, but there was none of that! Not even a banana! Ugh. I knew that I needed energy so I made the best choice I could and ordered the Egg and Cheese Sandwich. It was just ok—it definitely could have used a few more minutes in the Panini maker because the cheese wasn’t melty enough for me!

Lunch

After a busy morning we found a nice little restaurant near campus for lunch. It’s called Christopher’s and is in Porter Square. I’d never been there before but it was pretty good! I ordered a Spinach and Apple Salad with Grilled Chicken. It was delicious! The salad also had red onions and toasted pecans (yum!) and I got the blue cheese and vinagrette on the side. 

Dinner

And what you may ask was my first adventurous dinner in my new place? Haha, well if you were expecting something extravagant you will be sorely disappointed.

I was unpacking and moving stuff around all afternoon and night and didn’t realize how hungry I was getting. Before I knew it, I looked at the clock, saw it was 8 and realized I was STARVING. I really didn’t feel like being creative (or walking down 4 flights of stairs to the kitchen…) so I just threw together the most random bowl ever. 

Yep, that’s an apple, strawberries, grapes, trail mix, and cool whip drizzled with maple syrup. I honestly don’t even know what I was thinking. Whatever, it worked ; )

Halfway There

Well we’re in a hotel in Fiskill, NY (aka middle of nowhere) halfway to Boston. I’m going into my senior year, so you would think I would have the hang of this by now, but for some reason I’m still pretty anxious about the start of another year. I think it’s because I’m going to be so busy with really tough classes and tons of extra-curricular activities, an internship, job searching, etc. etc. Plus the unfamiliarity of living in a new place and the stress that comes from the big change of going from a fully functional kitchen to basically dorm-living is really stressing me out. I’m so nervous about being able to keep up with my healthy living. I’m definitely going to try to keep up with this blog because it really keeps me more accountable and helps me make more balanced and interesting food choices.

Breakfast

I woke up early this morning to finish packing. I did some cardio also because I knew that my legs wouldn’t be happy being cooped up in the car all day. I wasn’t hungry when I first woke up (when I’m nervous/stressed I really lose my appetite) so I didn’t need a pre-workout snack. After exercising I had a big fruit plate which really hit the spot.

We left the house around 9:00 and I packed myself a PB on an Ezekial muffin to eat on the road.

Dinner

We drove for about 6.5 hours today and only had to stop once for gas/bathroom break. We’re listening to a John Grisham book on tape which is really making the time fly by!

Since I was just sitting in the car all day, not doing anything physical I didn’t realize how hungry I was getting. I really wish that I had packed an emergency bar or some fruit or something because 6 hours is WAY too long for me to go without eating, especially after exercising. When we finally arrived at the hotel and I stood up, I actually felt a little light-headed and nauseous I was so hungry.

There is a Ruby Tuesday right next to the hotel we’re staying at so we headed over there for an early dinner. I had a few bites of my dad’s salad because I was about to pass out from hunger. 

For my meal I ordered the New Orleans Seafood: Spicy, broiled tilapia that’s topped with seasoned, sautéed shrimp and rich Parmesan cream sauce. This came with a side of broccoli and brown rice pilaf topped with cheese and tomatoes. To make it a little healthier I ordered it without the cream sauce or cheese.

I gobbled this up because I was starving but it really wasn’t all that good. I have definitely made better meals for myself. The shrimp were really good and very spicy but they were tiny! The fish was sort of bland and dry so I swapped some of it for a few bites of my dad’s mashed potatoes and a couple tiny fried shrimp (definitely not the healthiest of swaps! but very tasty!)

Dessert

Also next to the hotel was a Coldstone so we obviously had to pick up some dessert! I sampled the Cookie Batter ice cream but was actually pretty disappointed–it was sort of flavorless, definitely NOT worth it! I’m glad I sampled before I ordered.

I ended up ordering the Sinless Sweet Cream with strawberries, blueberries, raspberries, and rainbow sprinkles. As usual, I saved my sample spoon to eat it with! This guy is waiting for me in the freezer–I can’t wait to eat it!

Time to order a movie and relax a little because tomorrow is going to be quite the busy day. Another long drive, and moving all my stuff up the the 3rd floor (plus a big flight of stairs getting up the house)—let’s hope my arm exercises have paid off! Then it’s time for a GINORMOUS grocery shop and maybe I’ll treat myself to a Whole Foods shop as well : )

Shopping Success

I knew shopping would be a success when I walked into the outlets and saw Jerome Bettis signing autographs!! The line was out of control so I didn’t wait to get anything signed but I did manage a pretty good picture. Boy I love my Steelers : )

I was definitely a girl on a mission today and powered through stores like crazy. I definitely needed a treat to re-fuel. I had a yummy Orange Mango Banana Vivanno. With all my loot in the background.

I did FABULOUSLY! Here’s what I got. From American Eagle:PJ pants, jeans. Ann Taylor: Black Pants. Old Navy: Yoga pants, argyle shirt. Gap: Long sleeve shirt, sweater, belt. And guess how much that all cost me…

$180.

Yep, I’m amazing.

Snack

Delicious, extremely juicy (I had to hold a papertowl right up under my chin while eating this!) nectarine.

Dinner

My mom and I treated ourselves to dinner out tonight as a goodbye meal (my dad is the one making the loooong 12hr drive with me tomorrow). We went to Aladdin’s which is an amazing Middle-Eastern Restaurant. It’s so good, I can’t believe this was the only time I went this summer!

To start we split the hummus and pita appetizer. 

And for my main meal I ordered the Chicken Tawook salad. This was so good and the perfect amount. The chicken was really tender and juicy and very flavorful. I tend to overcook my chicken when I make it at home so it was nice to have such moist, tender chicken. I really love the warm chicken with the cool greens–it makes for a really nice contrast. Yumm!

I finally finished packing so now I’m off to curl up in my cozy comfortable bed for the last time until Thanksgiving. I’m so sad! : (

Waffle Tower and Concerns

Breakfast

Drool.

I have a busy day ahead of me. I already exercised, showered, and ate. Now it’s time to PACK! I hate packing, it’s always so depressing to spend the last night in my room once everything has been packed away. It’s just so sad and empty.

Concerns

I started my clothes packing this morning and realized that I desperately need new stuff. A lot of my clothes are pretty old—like from when I weighed 30lbs more than I do now. Needless to say they aren’t so flattering on me. I hate spending money on clothes and always feel guilty when I have to buy new stuff. I know this is illogical and it’s not like I’m wasting money because I do actually need new clothes but I have just put off buying a new wardrobe for way too long. I have slowly accumulated a few pieces that really fit and flatter me, but I still have way too much stuff that is just. too. big.

Part of me is really scared of letting go of these old clothes. I have some sort of fear that as soon as I get rid of them, I’ll gain back all the weight and need to buy new stuff again. I have maintained my new healthy weight and lifestyle for months now, and there is no reason for me to go back to the way that I was. I didn’t lose the weight through “fad” diets, I did it through a lifestyle change and I am so much happier and healthier now that there is no reason for me to go back to my old ways! I’m sure that a lot of people have gone through similar situations as this (at least I hope I’m not the only one!) so if anyone has any advice, it would be greatly appreciated!

Another problem I have is that I still am not entirely confident and sometimes try to hide behind my baggy clothes. There is no reason for this! I have a strong, healthy body that I have worked very hard for and am very proud of. I should be showing off my strength rather than hiding behind clothes that don’t fit me. 

Sorry this was sort of incoherent! Anyway, the point is—a new outlet mall just opened up about 20 minutes from my house and that’s what my plan is for this afternoon. I’m going to go and finally buy myself some clothes that actually fit me well and are flattering. My goal is to only pack clothes that actually fit and look good so that I have no excuse to look like a bum in old/baggy clothing. Wish me luck!

And I leave you with a before/after so you can see what I’m talking about. This is actually really embarrassing for me to post, but at the same time it makes me really proud to see how much progress I have made. Although the weight-loss part was hard at times I really think that the balance of maintenance is even harder. I know that I wouldn’t be able to do it without all the great support I get from all of you—so thanks for everything!

Perfect Dinner

I am seriously going to miss cooking when I’m up at school. It is so relaxing to be in the kitchen and really is a stress-reliever. I love creating something delicious and healthy and feeling great about all the ingredients that went into it. Dinner tonight was amazing–definitely 5 stars! But before we get to that…

Snack

I munched on some kettle corn and a few berries while reading this afternoon. That was probably the best strawberry I’ve ever eaten, it was amazingly sweet.

Dinner

This was seriously the perfect dinner! It included everything: protein, whole grains, veggies, and fruit! Any meal that includes fruit is a winner in my book.

I made Jamaican-Jerk Fish by marinating tilapia in green onions, jalepeno, ginger, vinegar, worceshire sauce, salt, oil, thyme, and allspice. I grilled it up with a side of brown rice and steamed broccoli. And the best part—-Brown Sugar Glazed Pineapple. This was unbelievable! I just coated some pineapple with brown sugar and grilled it for about 10 minutes. It was so soft and sweet and perfect. This would make an outstanding dessert, especially with some vanilla ice cream!

The flavor combinations of this meal were amazing. I loved the kick the fish had from the jalapeno combined with the sweetness of the pineapple. The rice was great to soak up any extra juices and the broccoli added another great texture to the mix. All in all it was perfection!

Dessert

I continued the perfect food theme with dessert. A Hawaiian Blizzard from DQ made with vanilla soft serve, banana, pineapple, and toasted coconut. Mmmmmm. I ate this while watching Obama’s speech and the final night of the DNC. It would be so exciting to be there! 

And that ends my great day filled with amazing food. Can’t ask for anything more! Let’s just hope tomorrow is as good!

Lots of Veggies

It’s another dreary day here–I can’t believe how cold it is outside, it does NOT feel like summer at all! I wish the rain would go away so that I could go for one last long run on my favorite trail before heading back to school. Unfortunately it was rainy and miserable this morning so I had to settle for an indoor workout. Boo.

Breakfast

I had a delicious bowl of cereal this morning. I love when the bananas are extra ripe and sweet. I totally forgot to add my usual tablespoon of flax though and really noticed a difference in my satiety. I got hungry MUCH earlier than usual. That little bit of healthy fat really works magic.

Lunch

I was out running lots of errands to get ready to go back to school and was seriously craving a big, crunchy salad. This guy was HUGE–my eyes were definitely bigger than my stomach and I couldn’t finish it all. I ended up just picking out all the goodies and leaving a lot of the lettuce. I always do this! I should just skip the lettuce to begin with!  

I don’t like rain when I’m outside in it, but I actually really love the sound of rain when I’m nice and cozy in my house. I think I’m going to go curl up with a book, a cup of tea, and relax a bit. See you later!

Starving!

Well my lack of appetite earlier in the day made a complete 180* this afternoon—I’ve been STARVING since about 7:00 up until (and including) now! I’m seriously a bottomless pit right now, it’s strange.

Lunch

I finally made myself lunch around 3:00–a delicious eggbeater omelet with turkey slices, laughing cow, spinach, salsa, and of course ketchup on top. On the side I had some toast and a very sweet jazz apple-my favorite!

Dinner

It’s so nice to be done with work! I enjoyed my job this summer and really liked the people I worked with but it was definitely exhausting. Most days I was on my feet for up to 9 hours! I should really treat myself to a pedicure in the next few days : )

I worked a shorter shift tonight 5-9:30, which was nice, but unfortunately was right smack dab in the middle of dinnertime! 

I packed a kashi bar to eat during work to hold me over until I could have something more when I got home. I started getting hungry around 7, and ate this at 7:30. I swear it made me hungrier though! I really wasn’t sure I was going to make it—I was SO HUNGRY by the time I left work that I seriously ran to my car to get home ASAP. I was pretty much ready to eat my own arm by the time I walked in the door.

I made pretty much the quickest thing I could think of. I had fage with fruit (nectarine and blueberries) and some cereal (heart to heart and go lean). I also popped up some kettle corn and had 2 Mi-Del Gingersnaps. This was a pretty random meal but it came together FAST which is what I needed. I really like these ginger cookies—they’re really spicy and crunchy, yum!

I was still really hungry after I finished eating and tried to let myself digest a little bit but I knew my hunger wasn’t going away just yet so I made myself a little snack mix.

Then I may have had some more crackers and possibly some peanut butter straight from the jar. But there are no pictures so who knows? No photos=no calories, right?

I’m still hungry but I just don’t feel like eating anymore tonight, I’m too tired. Hopefully my brain and stomach will work something out and realize that I should be full right now. While they work on that, I’m going to bed! Goodnight!
