Something Old, Something New

Today was a nice mix of old and new treats, and I definitely think I’m back on my cooking A-game, so that’s a good thing!

Breakfast

I woke up starving this morning. My stomach felt so empty and was making mean noises at me. I knew that I needed a big heavy breakfast that would fill my angry stomach up and keep me full for a long work day. Of course my Fage, pear, Fiber One, and flax combo never lets me down.

Lunch

Work was really busy today, which is good because it makes the time fly by. When it was time for my break I enjoyed a tuna wrap and juicy apple while reading my book Prisoner of Birth by Jeffrey Archer. It’s so good, I can’t put it down!

Snack

I had about 45 minutes after work before my yoga class so I snacked on a mini clif bar and did some boring studying. I love these bars, they’re really moist and dense and do a good job holding me over despite their small size. I’ve never actually had a full sized Clif bar, but I think I’m going to have to give them a try sometime soon. I hear they have a carrot cake flavored one. Yum!

Dinner

For dinner I tried a new recipe, and a new product. 

I found these mini boxes of chicken broth at Whole Foods last time I was there, and just had to pick them up! I always have the problem of opening a box, using a cup, and then forgetting about it in the fridge. Needless to say, I almost always end up throwing it out, which is a shame because I hate wasting food. These are the perfect size-each box is a 1 cup portion!

For dinner I made Lemon Chicken and Roasted Asparagus. It was good, and nice for a light, quick, easy meal with little clean-up, but really it was nothing special. The chicken did come out perfectly golden brown though, which is always a plus! And just for you blog readers I even added some lemon as a garnish. I want my pictures to look pretty for you!

Now I’m off to relax after a very long day. Some more reading and dessert are definitely in the picture : )

    Ah I absolutely LOVE lemon chicken! Thank you for showing us what the broth looks like – I will definitely be on the lookout for that this weekend at Whole Foods.

    I’m completely there with you on the goal for the rest of the summer. I’m going to do my best to enjoy each day – I really need to give yoga a try because it sounds like I would really enjoy it.

    And THANK YOU for reminding me about Kath’s video!! I completely forgot she did one about mangoes – I have to look that one up now!
