Back in the Kitchen

I was getting pretty hungry this afternoon while reading so I had my favorite flavor mini clif bar.

It felt so good to be back in the kitchen cooking tonight. Since I’ve been working so much I haven’t had a chance to cook in way too long. For dinner I made Thai Inspired Tilapia. This was so easy to make, and clean up! It was really cool how I prepared it. I put the tilapia, carrots, and green onion drizzled with an olive oil, asian fish sauce, garlic, sugar, and ginger mixture on tin foil, folded the foil over and created little packets. Then I put the packets on the pan over medium heat for about 12 minutes and the result was amazing. To clean up all I had to do was toss the foil!

To complete the colorful meal I made roasted broccoli and brussels sprouts. Roasted veggies are my favorite!

Sometimes I run into the problem of fish drying out when I cook it, but not this time! Since the tilapia steamed itself in its little packet it stayed really moist and flavorful. Look at how juicy and flakey that is. Beautiful! Definitely another winner of a recipe.

Since today was my fun day off, I decided to indulge a little for dessert. Since it was so hot out, tonight was the perfect night for ice cream. I had a banana cream pie blizzard from Dairy Queen and it was amazing. 

I know it’s silly, but getting this is actually a really big step for me. I usually will get the simplest, lowest calorie, diet-y dessert I can (or will skip out entirely and have something boring at home) and then am totally unsatisfied. As a result I’ll eat my lame dessert and then steal bites from my family or pick at food all night out the fridge and pantry. I honestly can’t remember the last time that I truly let myself go out and get an indulgent treat and really enjoy it, guilt free. Well tonight was finally that night. I savored every bite of this blizzard and was totally happy and satisfied when it was done. And I’m very happy to say that I had no ‘unauthorized’ snacking after I finished, for the first time in a long time. I know it’s a small success, but I’m proud of myself nonetheless.

Back to the grind for me tomorrow, but I hope everyone else has a wonderful, relaxing weekend!

    Sarah – you and I are so similar it’s ridiculous! Until recently, I ALWAYS got the lowest calorie dessert and picked at food ALL. NIGHT. LONG. I’m proud to say I had some ice cream last night myself (fro yo, but still – DELICIOUS!) and I didn’t do any snacking either!

    We need to be real-life friends. SERIOUSLY!!

    I am so glad to hear about your pleasurable dessert choice, I’m proud of you too :). To be able to eat something you love occassionally and without deprivation is totally admirable. Way to go girl! Not to mention that your tilapia looks delicious. like really. YUM 🙂

    Sarah – thanks for checking out my blog, and I’m so glad to have found yours! Like Jenn posted, I used to be the same way about desserts. It’s so much better to just have what you want and be satisfied. And also – it’s great to “meet” someone from Western PA 🙂

    Congrats on eating guilt-free. That is something that I struggle with, too.

    Wow, good job on picking the real dessert. I do the whole low-cal or home dessert thing too, and the horribly unsatisfying and frustrating snacking bout always ensues. I really need to work on that. Next time I’ll work on following your lead 🙂
