Lazy Night

My eating schedule was thrown waaay out of whack today because after I played around on the computer and got cleaned up from the gym I layed in bed and dozed for about an hour and didn’t get around to eating “breakfast” until noon! Now, most college students don’t get up and eat breakfast until noon so I almost felt like one of them besides the fact that I had actually been up since 8 and already hit up the gym.

Breakfast

I had my favorite waffle tower but it just wasn’t as good as it is at home because I don’t have a plethora of fresh berries in my fridge here. A banana had to suffice.

Lunch

Seeing that I had breakfast at lunchtime, I sort of snacked my way through the afternoon instead of having another big meal. To help ease the pain of studying away my Saturday I treated myself to Starbucks. I had a nonfat 1-pump sugar free vanilla latte (what a mouthful!) and a vanilla almond biscotti.

And when I got back to my room a little later I had a pear.

Dinner

Dinner was really good tonight, and so, so easy! While some whole wheat pasta was cooking up, I just sautéed some frozen shrimp and broccoli, heated up some pasta sauce and mixed in some cheese. It was delicious! I usually don’t add cheese to my pasta but I’m glad I did, it was an awesome dinner—so beware, this meal will likely make MANY appearances throughout the year. 

Dessert

I definitely needed a treat for dessert tonight after my long day of studying. So I had my favorite thing—ICE CREAM! I made a little sundae with some Stonyfield Vanilla Frozen Yogurt, crumbled up Late July Cookies, threw in some frozen strawberries, and topped it with a generous dollop of whipped cream. This was SO GOOD. I love me some ice cream!

I’m just planning on taking it easy tonight because I know I have a lot going on next week (my friend’s 21st birthday, 1st senior pub night, and Homecoming) so I’m going to take the lazy, relaxing nights when I can get them! Also I have to get up early tomorrow for the Arthritis walk (unfortunately I don’t think we’re allowed to run because we are supposed to stick together as a group). Oh, and for those of you who asked–I’m in Alpha Omicron Pi (AOII) and I LOVE it! : )

    Oh yummy day! I’m making waffles for my family tomorrow as a goodbye breakfast and I have one container of Greek yogurt left. Do you see where I’m going with this? Waffle tower!!!

    I’ve never tried the biscotti from Starbucks before – what’s the verdict?

    I love the Stonyfield fro yo! I’ve never tried the vanilla though, so that’s next on my list. If you like coffee (and I’m pretty darn sure ya do!), I’ve heard the Java Chip is really good. Haha, although I get confused easily, so it may have even been you who told me that!

    Yum! That’s delicious, all the way through :-) Sorry you were stuck studying on a Saturday – I hate when I have to work weekends, it makes it feel like there is no real break in the week at all, even if I’m home. I’m missing the summer fruit already… have you tried cooking up some cut up apple in the microwave for a minute or so and then topping the waffle with it? I did that with my oatmeal this morning and it was so good, all the apple’s natural sugars came flooding out and they were so sweet mixed with the cereal – I bet it would work really well on the waffles since the square holes would hold all the sweet juice….

    That waffle tower looks amazing! I’m going to have to try some Greek yogurt with mine sometime soon!

    Stonyfield fro-yo IS the best! Have you tried the After Dark Chocolate? Now there’s a winner! ;)

    that waffle breakfast look soooooooooooooooo good!!! i could eat it off my screen! i think it’s because i’ve been craving waffles, don’t have any and can’t make any because i don’t have a waffle iron >P

    but your dinner looks so good! along with your dessert! i wanna eat that off the screen too!!! can you come over and cook for me??!??!?! hehe!

    How funny! I have spent lots of time in USC through the years! I went to Elon, in North Carolina. I have a friend from law school who went to Tufts undergrad and loved it ;)

    As soon as I saw the word “arthritis” in your post, I knew you were an AOII!
